BUTTERNUT SQUASH MAC ‘N CHEESE 🧀 This is a great way to add some extra veggies into your kids diet in the form of a sauce. It’s great for baby weaning too, just leave out the seasoning.
INGREDIENTS
* 1 medium butternut squash
* 200g / 2 cups macaroni or conchigliette pasta
* 200ml / 7oz whole milk
* 100g / 1 cup grated cheddar cheese
* 1 tbsp butter
* salt and pepper to taste
INSTRUCTIONS
1. Preheat the oven to 200c / 390f.
2. Cut the butternut squash in half lengthways. Scoop out the seeds and place the two halves of squash flesh side up on a baking tray. Bake in the oven for 30 minutes or until the squash is soft and has fully cooked through.
3. Meanwhile cook the pasta according to the package instructions.
4. Once the squash has cooked, spoon out the flesh straight into a blender or food processor. Add the milk, cheese and butter and blitz until all the ingredients have combined to a sauce consistency. If it seems too thick then add a little extra milk. Season with salt and pepper if you wish.
5. Drain the pasta and mix it with the butternut squash sauce.
6. Serve immediately.

1. Cut the butternut squash directly down the middle. Remove the
seeds and discard.
2. Cut each half into 5 long pieces, season with salt and dress in olive
oil.
3. Using a tin foil enclose them making sure there are
no holes. Cook in a 180°C oven for 35 minutes until soft.
4. Heat your BBQ, Soak apple wood smoking chips in water.
5. When BBQ reaches 120°C, add the chips to the coals, place squash
on rack and smoke for 20 minutes
6. Finely slice onion and garlic and sweat in a little oil. Lightly season.
7. Add stock and bring to the boil.
8. Scrape the flesh from the squash and add to the stock with the
saffron.
9. Bring to the boil and simmer for 3 minutes. Add beurre noisette
and crème fraiche. Blend in a blender until smooth. Pass through a
fine sieve. Season with salt and sherry vinegar . .

Butternut triplets! 😍 They’re so cute! Not sure I could cope with real triplets, but plant-based triplets I’m totally cool with! 😂🤪 Most of my pumpkin patch is looking pretty sorry for itself at the moment with me battling downy mildew and altercaria leaf spot, but the butternut squashes seem happy at least and I have plenty of other decent sized squashes and gourds (it just looks ugly!). Next year I will have to plan my pumpkin planting a little better to allow better airflow and I will make sure they aren’t being watered in the evening (oops, my bad 👀💦🍄😬). Fingers crossed for these little babies at least as they are one of my favs! Butternut squash goes into almost everything in our house, it’s one of those things I genuinely cannot get enough of! 😋😍💚. .

Side dish for 4 of meal for two
Salad
Half a butternut squash (peeled, deseeded and roughly chopped
2 sprigs rosemary (optional)
1 can of lentils vertes (drained and rinced)
3 handfuls of kale
1 large shallot (diced)
Thumb size piece of ginger (peeled and finely chopped or Grated)
3 cloves of garlic (minded)
1 green chilli (seeds removed and finely chopped
1tbsp soy sauce
1tbsp pomegranate molasses
1 tbsp honey
2tbsp lemon juice
Dressing
1tsp tahini
2tbsp natural yogurt
1tbsp lemon juice
Preheat oven to 190 degrees. Place a baking tray with 1tbsp of coconut oil (or whatever oil you have) in the oven for 5 minutes. Add the chunks of butternut squash to the heated tray and toss in the oil. Season with salt and pepper and add the rosemary if using.
Roast for 25 minutes or until cooked though and starting to caramelise on edges.
Heat a small amount of oil in a small saucepan and fry the shallot on a low heat until soft.
Add the chilli, ginger and garlic to the pan. Cook for 2 minutes.
Add the honey, stir and cook for 2 minutes. Then add the soy sauce and pomegranate molasses. Continue cooking for 1-2 minutes.
Place the lentils in a bowl and pour over the mixture from the pan. Stir through.
Leave to one side.
Lightly cook the kale by placing it in a wide pan with a splash of water on a low to medium heat. Pop the lid on for a minute or two to build up the heat and let the veg steam then stir until then leaves are bright green and tender. Season with salt.
Add the kale to the lentil mixture and toss everything together. Check the seasoning.
Now for the dressing. Grate half a clove of garlic into a small bowl. Add the lemon juice and tahini and stir thoroughly until combined. The add the yogurt.
Add the roasted squash to the salad and drizzle over the tahini dressing.
Done!

Heute gibt es für euch *Thai-Butternuss-Linsen-Suppe*. Die Suppe ist nämlich das Leibgericht von Megan @megan_mly und das sagt sie darüber:

„Es war einer der ersten 'größeren' Gerichte, die ich selbst zubereitet habe und es war ein totaler Erfolg. Meinen Eltern und mir hat es richtig lecker geschmeckt und gesund ist es halt auch noch 😊“.

Zutaten meiner Version für 4 Personen: 1 EL Kokosöl | 1 Butternusskürbis | 1 Zwiebel | Currypaste Panang (@reishunger ) | 150 g rote Linsen | 1 Liter Gemüsebrühe | 1 Dose Kokosmilch | Salz | Pfeffer | Zitronensaft | 2 EL Kokosraspel | Kürbiskerne | Frühlingszwiebel

Kürbis mit Schale und Zwiebel in grobe Würfel schneiden. Einige Würfel für die Einlage langsam rundherum braten, beiseite stellen. Kürbis und Zwiebel in Kokosöl anschwitzen, Currypaste untermischen, mit Brühe aufgießen und kochen, bis der Kürbis weich ist. Pürieren, Linsen dazu geben und nochmal 10 Minuten kochen. In der Zwischenzeit Kokosraspel ohne Öl leicht in einer Pfanne rösten. Suppe mit Salz, Pfeffer, Zitronensaft und ggf. Chili abschmecken, in Teller füllen. Nach Belieben Kokosmilch dazugeben (den Kontrast finde ich besser als zusammen gekocht). Kürbiswürfel, Kokosraspel, Kürbiskerne und Frühlingszwiebeln dazu- fertig ist eine der besten Suppen, die ich je gegessen habe😍.

VEGAN COCONUT SUMMER SALAD WITH @this.uk CHICKEN!! Super tasty, healthy, and fairly quick for a light summer supper... and low carb.. this serves two, or one, if you’re a piggy for veggies (and everything else...) like me 🐷 and it’s pretty easy but delicious,... which means you can be lazy... which by default is a good thing. Right? Right.
Discovered @this.uk two days ago and now I am obsessed- their meat alternatives are amaaaazing.
1. Cut up your butternut squash, into inch size chunks, cover in a wiiiiiddle bit of coconut oil, and 1tsp thyme and some salt to taste in a roasting tin. Then cook for 40 mins while you do everything else.
2. Heat 1tsp some coconut oil in a wok, and place 8 stalks of tender stem broccoli (which is the best broccoli ever, fight me) onto a low heat and occasionally stir for four mins, then add crescents shape pieces of half a courgette, and continue to stir fry until the courgette becomes golden. Then take the veg out of the wok and put aside on top of some kitchen roll.
3. In the same wok, toast 50 grams of desiccated coconut, then put aside.
4. Start to gently cook @this.uk chicken pieces according to instructions in the wok
5. Cut up two gem lettuces, and add 1tsp of oil, 1tsp of soy sauce, a smol splash of maple syrup, and the juice of half a lemon and toss with a vague aplomb. (Yeah, we getting sassy.) 6. Add the green veg and toasted coconut to the salad, along with the squash and chicken, the mixy mixy mix.
7. Voila, healthy, and funky summer salad.

Heute gibt es für euch *Thai-Butternuss-Linsen-Suppe*. Die Suppe ist nämlich das Leibgericht von Megan @megan_mly und das sagt sie darüber:

„Es war einer der ersten 'größeren' Gerichte, die ich selbst zubereitet habe und es war ein totaler Erfolg. Meinen Eltern und mir hat es richtig lecker geschmeckt und gesund ist es halt auch noch 😊“.

Zutaten meiner Version für 4 Personen: 1 EL Kokosöl | 1 Butternusskürbis | 1 Zwiebel | Currypaste Panang (@reishunger ) | 150 g rote Linsen | 1 Liter Gemüsebrühe | 1 Dose Kokosmilch | Salz | Pfeffer | Zitronensaft | 2 EL Kokosraspel | Kürbiskerne | Frühlingszwiebel

Kürbis mit Schale und Zwiebel in grobe Würfel schneiden. Einige Würfel für die Einlage langsam rundherum braten, beiseite stellen. Kürbis und Zwiebel in Kokosöl anschwitzen, Currypaste untermischen, mit Brühe aufgießen und kochen, bis der Kürbis weich ist. Pürieren, Linsen dazu geben und nochmal 10 Minuten kochen. In der Zwischenzeit Kokosraspel ohne Öl leicht in einer Pfanne rösten. Suppe mit Salz, Pfeffer, Zitronensaft und ggf. Chili abschmecken, in Teller füllen. Nach Belieben Kokosmilch dazugeben (den Kontrast finde ich besser als zusammen gekocht). Kürbiswürfel, Kokosraspel, Kürbiskerne und Frühlingszwiebeln dazu- fertig ist eine der besten Suppen, die ich je gegessen habe😍.
