In other news, here is my lunch bowl from today - gnocchi salad, butter beans cooked in turmeric with a pinch of salt, a little bit of leftover rice, arugula, cucumber, tomatoes, peas, mushrooms. To make the gnocchi salad, I simply mixed together the gnocchi with around a tbsp mustard, 2 tbsp soy yoghurt and some salt, pepper and lemon juice. Deffo obsessed with this combo and glad I have leftovers for tomorrow!! Hope you’re all having a great Saturday xx

For this creamy pasta bowl I made a spinach pesto (4 handful of baby spinach, 2 small cloves of garlic, 1 handful of nuts, a pinch of salt and some olive oil blended together in a food processor until smooth) and mixed this pesto with some store bought vegan cream cheese and a few tablespoons of pasta water🌿Alternatively to the cream cheese a cashew cream would also work perfectly (1 cup of cashews blended in a food processor with 3/4 cup of water until smooth)🌿🌿🌿

I am so in love with my @madmilliekits vegan cheese kit. It make 3.6kgs of cheese!! It can be used in any kitchen and does not require any specialised equipment or experience. All cheese can be made in less than a day!

Recipe:
Ingredients:
Peppers: 3 cored
Beluga lentils: 1 tin drained
Onion: 1 thinly sliced
Tomato: 1 small thinly sliced
Xylitol: 1 T
Balsamic vinegar: 1 T
Mixed Italian herbs: 1 T
Fresh basil: 1/2 C roughly chopped
Olives: 2 T smashed
Olive oil: 1 T
Salt to taste
Vegan Feta prepared with @madmilliekits vegan cheese kit: 4 Tbsp
Method:
1) Preheat oven to 180C
2) Heat olive oil in a pan and add onions, xylitol and balsamic vinegar. Stir for 5-7 minutes till onions are caramelised
3) Add tomatoes, herbs and lentils and mix well.
4) Stir in olives and turn the flame off
5) Stuff lentils in prepared peppers leaving space at the top for some feta.
6) Top each pepper with feta cheese and transfer to oven. Roast for 30-35mins till peppers are soft

1 large whole, skinless salmon fillet OR 4-6 smaller, 6-ounce fillets⁣⠀
salt and pepper, to taste⁣⠀
1 teaspoon McCormick Chipotle Chili Pepper⁣⠀
1 1/2 teaspoons McCormick Garlic Powder⁣⠀
1 tablespoon olive oil⁣⠀
2 tablespoons melted butter⁣⠀
1 tablespoon honey⁣⠀
juice of 1/2 lime⁣⠀
Mango Avocado Salsa⁣⠀
2 mangoes, diced⁣⠀
1 avocado, sliced⁣⠀
1/2 white or red onion, finely chopped⁣⠀
1/4 teaspoon salt, or to taste⁣⠀
1/2 teaspoon McCormick Chipotle Chili Powder⁣⠀
1/2 teaspoon McCormick Garlic Pepper⁣⠀
1/4 cup cilantro, roughly chopped⁣⠀

(If using individual fillets, you can use individual pieces of foil as well) Fold the edges of the salmon up a little bit around the salmon (this helps to keep the juices around the salmon instead of spilling into the grill).⁣⠀

Season salmon with salt and pepper to taste on both sides. Sprinkle garlic powder and chipotle chili pepper over the top, then drizzle olive oil over the top. Use your fingers to rub oil into the top of the salmon.⁣ Grill salmon for top-down for 5-7 minutes, then flip and grill for another 8-12 minutes until salmon is cooked through and edges begin to brown.⁣⠀

makes 4 servings⠀

Ingredients:⠀
2 large zucchini, halved, then halved again lengthwise as shown ⠀
sea salt and fresh ground black pepper, to taste, about 1/4 teaspoon each ⠀
1 Tbsp avocado oil, olive oil⠀
1 small yellow onion, diced⠀
1 lb. lean ground turkey or beef⠀
2 cloves fresh garlic, minced⠀
1/2 tsp chili powder⠀
1/2 tsp ground cumin⠀
1 tsp paprika⠀
1/2 cup organic corn, frozen (thawed) or fresh cut from the cob ⠀
1/2 cup cooked brown rice⠀
1/4 cup cooked crumbled nitrate free bacon⠀
1/2 cup shredded Monterey jack, or cheddar Jack cheese, divided ⠀
fresh chopped cilantro leaves, to garnish⠀
⠀
Instructions:⠀
⠀
Preheat your oven to 350 degrees f. ⠀
Scoop out insides of your zucchini, creating 'boats' and reserve it for later. ⠀
Place zucchini halves, cut side-up, into the bottom of 9”-x-13” baking dish and lightly spray or rub with cooking oil; season with sea salt and pepper, then bake just until zucchini begins to soften, about 10-12 minutes.⠀

Meanwhile, heat oil in a large skillet over medium heat. Add in onion and sauté for about 4 minutes. Stir in garlic and cook about 1 minute more. Add in ground meat, breaking it up with a wooden spoon as it cooks, drain most of the grease if necessary, then sprinkle meat with all seasonings and continue to cook until nicely browned.⠀
⠀
Take pan off the stove, then add in your corn, cooked brown rice, bacon, 1/4 cup of cheese, and the remaining zucchini flesh.⠀

Carefully spoon this mixture into zucchini boats then top with remaining cheese.⠀

Bake until zucchini is tender and cheese is melted and bubbly, about 12-15 minutes.⠀

Sprinkle with cilantro before serving. Enjoy! .⠀

Just trying to use all of this garden zucchini! 😂⠀ ⠀ THESE ARE DELICIOUS.⠀ ⠀ The entire Family LOVED em!⠀ ⠀ Great reviews from even my picker eaters, so I know you're gonna love them too!⠀ makes 4 servings⠀ ⠀ Ingredients:⠀ 2 large zucchini, halved, then halved again lengthwise as shown ⠀ sea salt and fresh ground black pepper, to taste, about 1/4 teaspoon each ⠀ 1 Tbsp avocado oil, olive oil⠀ 1 small yellow onion, diced⠀ 1 lb. lean ground turkey or beef⠀ 2 cloves fresh garlic, minced⠀ 1/2 tsp chili powder⠀ 1/2 tsp ground cumin⠀ 1 tsp paprika⠀ 1/2 cup organic corn, frozen (thawed) or fresh cut from the cob ⠀ 1/2 cup cooked brown rice⠀ 1/4 cup cooked crumbled nitrate free bacon⠀ 1/2 cup shredded Monterey jack, or cheddar Jack cheese, divided ⠀ fresh chopped cilantro leaves, to garnish⠀ ⠀ Instructions:⠀ ⠀ Preheat your oven to 350 degrees f. ⠀ Scoop out insides of your zucchini, creating 'boats' and reserve it for later. ⠀ Place zucchini halves, cut side-up, into the bottom of 9”-x-13” baking dish and lightly spray or rub with cooking oil; season with sea salt and pepper, then bake just until zucchini begins to soften, about 10-12 minutes.⠀ ⠀ Meanwhile, heat oil in a large skillet over medium heat. Add in onion and sauté for about 4 minutes. Stir in garlic and cook about 1 minute more. Add in ground meat, breaking it up with a wooden spoon as it cooks, drain most of the grease if necessary, then sprinkle meat with all seasonings and continue to cook until nicely browned.⠀ ⠀ Take pan off the stove, then add in your corn, cooked brown rice, bacon, 1/4 cup of cheese, and the remaining zucchini flesh.⠀ ⠀ Carefully spoon this mixture into zucchini boats then top with remaining cheese.⠀ ⠀ Bake until zucchini is tender and cheese is melted and bubbly, about 12-15 minutes.⠀ ⠀ Sprinkle with cilantro before serving. We enjoyed this rainbow buddah bowl with a lovely courgette salad that a friend gave me the recipe for.
. It was grated yellow and green courgettes from our garden mixed with olive oil, lemon, chilli and fresh mint. Just delicious on it's own or as part of a mixed bowl like this.

We also used the bargain @hellmansmayonaise salad dressings that we picked up for 49p at poundstretcher and they were all really good (Red pepper vinigrette, tomato and beetroot and mango vinigrette )

Tagliare 1 cipolla a dadini e farla soffriggere con un po di olio.

Receta bruschetta con tomates cherry y whipped feta 🍅🍅🍅
6-8 bruschettas (depende el tamaño de la rodaja)

Ingredientes:
2 tazas de tomates cherry (yo uso @bioveorganicosgt )
1/2 taza de albahaca fresca (de @bioveorganicosgt )
3 cdas de aceite de oliva
3 dientes de ajo
1 cda orégano
1 cda cebollín
1/2 taza queso feta
2 cdas queso parmesano rallado
1 cdita ralladura de lima o limón
1/2 cdita de pimienta
Sal al gusto
Tostadas de pan pumpernickel o el que tengan a la mano

Proceso:
1. Mezclar en u bowl los tomates, con la al albahaca, aceite de oliva, ajos picados, orégano, cebollín y sal. Dejar reposar en la refri por dos horas.
2. Luego, esparcir la mezcla en una bandeja para meter en el horno. Colocar en el horno por 30min a 375F.
3. Para mientras, en un procesador (si no tienen procesador lo pueden hacer a mano), mezclar el queso feta, parmesano, ralladura de limón, y pimienta. Probar, y si le hace falta sal, agregar un poco.
4. Sacar los tomates del horno, y tostar un poco las rodajas de pan.
5. ¡Armar las bruschettas! Primero poner una capa de la mezcla del queso sobre la tostada, luego le pueden poner arúgula, después los tomatitos y listo 👏🏼

Polpetta collection ~ How to make fishballs with cod & potato 👩🏻‍🍳🐠🥔 Below the recipe for 18 fishballs (for 5/6 persons):
350g cooked and blended cod
4 small crushed heated potatoes
2 tbsp grated Parmesan
1 beaten egg
8 black olives
Grated lemon peel
Black pepper
Mint
Salt
Breadcrumbs q.s. (optional, if you prefer the breading around the fishballs)
Once you’ve mixed everything in a large bowl, you can form the fishballs and pass them in the breadcrumbs. Put the fishballs on a baking paper, add some EVO oil and pre heat the oven at 200°C. Cook for 20/25 minutes.

Our family luckily has zero sensitivities to oats or gluten, so we eat overnight oatmeal on the regular....but many of you are often asking for breakfast and snack ideas besides oatmeal.
These little jars pack quite the nutritional punch 🥊
PERFECT for Meal Prep, as they last in the fridge for a good 6-7 days!
Makes 1 serving. Make enough for your week ahead!
Ingredients for each ONE serving:
1/2 cup unsweetened, organic coconut, almond, or cashew milk
2 Tbsps chia seeds
1.5 Tbsps flax seeds
1 Tbsp hemp seeds
1 tsp vanilla
1/2 Tbsp raw honey, or pure maple syrup (sweetness factor is very personal, you may find that you want more or less)
tiny pinch of sea salt
Toppings for each jar:
1 Tbsp all natural peanut butter
1 Tbsp chopped peanuts
1/2 sliced small banana
Instructions:
Place all the ingredients except toppings in a 7.4 - 8 ounce glass jar with a fitted lid.
Stir well to combine ingredients.
Refrigerate overnight.
Right before serving add toppings, stir and enjoy!

Lomo marinado (Mercadona carne congelada)
1 cebolla mediana
2 zanahorias medianas
Aceite
1. Ponemos el lomo en una fuente apta para horno. Le hacemos unos cortes para que se haga bien por dentro.
2. Cortamos las zanahorias y la cebolla y las ponemos alrededor.
3. Ponemos aceite de oliva y al horno.
También podéis poner vino blanco.

Mijoté de légumes asiatiques (haricots verts, carotte 🥕 brocoli 🥦 courgette, oignons blancs, pois gourmands) dans une sauce crémeuse au miso de riz brun @celnatofficiel 🍛 accompagnés de noodles de konjac 🥢 & de dés de tofu croustillant fait maison 🌱 ~ J’ai réalisé ce tofu croustillant en faisant mariner du tofu nature lactofermenté @soy_officiel dans une marinade au curcuma & miel 🍯, puis (au bout de 2 heures) j’ai taillé le bloc de tofu en dés que j’ai passé sous le grill du four jusqu’à obtenir le croustillant parfait 👍 ••

Confecção:
Comecem por refogar, em azeite, uma cebola com 3 cenouras raladas. Juntem o vosso molho de tomate, a gosto.
À parte, grelhem, num fio de azeite, lâminas de beringela e courgete (servem como substituto da massa de lasanha) que foram previamente temperadas com caril, sal, pimentão doce e pimenta preta.
Refoguem também cogumelos laminados (temperados com sal e pimenta) bem como batata doce aos cubinhos.

Para o molho bechamel:
Coloquem uns cubinhos de manteiga num tacho e adicionem farinha. Juntem bebida vegetal (ou leite, se preferirem) e deixem engrossar. Temperem com sal, pimenta e muita noz moscada.

Está então na hora de fazerem as vossas camadas a gosto.
Eu optei pela seguinte ordem:
1-Courgete laminada. 🥒
2-Preparado de cenoura, tomate e cebola.🥕🍅
3- Cogumelos.🍄
4-Molho bechamel.

This was a chuck together lunch with spare things I had in the fridge as we got back late due to the fact I was helping my mum deliver a wedding cake but I must say it was rather delicious 😋

• tomato’s • left over Brown rice and quinoa mix @tildarice ( mixed with a homemade tomato sauce using our homegrown tomato’s as we had so many I had to use them up for something as well as adding cumin, paprika and cayenne chilli pepper ) • 1/2 a packet of plant powers curried tempeh .

Our last stop in town before we caught our flight was the @fotografiska museum! They were having a special water exhibit, including showcasing the works of some greats such as @paulnicklen. •

Of course the exhibits were great, but one of best part of the #museum is actually its café! They have a small #café at the entrance, that serves cold beverages and some food. But if you go inside and make your way through the museum then on its top floor, there’s an entire floor of a beautiful café! They have a wide range of foods there, along with this gorgeous view of the city! Their lunch menu has a range of sandwiches, pastors, soups, as well as sweets! They have an extensive brunch and a dinner menu as well. •

We shared a salad, and a vegetarian sandwich, both of which were delicious, well-made and exactly what we wanted in light lunch! Their coconut chocolate ball was our FAVORITE! The seating is first-come first serve, but you can make a reservation there.
We ended up sitting here for around an hour, just admiring the beauty of the city, and connecting with each other, in the true sense of #fika. We certainly made a lot of memories and this café was the absolutely perfect end to it all! •
