Soft Baked White Choc Strawberry Cookies 🍪 (V, GF)

My favourite recipes to create are the ones that are quick to make, only need one bowl, use minimal ingredients and include healthy ingredients that most of us already have in our kitchen 🙋🏼‍♀️

Here’s today’s creation, inspired by the fact that strawberries were only $1.80 a punnet and I bought far too many in excitement 🤷🏼‍♀️

Ingredients:
▪️100g yoghurt of choice
▪️50g oat flour or flour of choice
▪️50g @happywayau vanilla pea protein powder or almond meal
▪️30g runny nut butter
▪️Optional: 20g white chocolate chips
▪️80g fresh strawberries, sliced
▪️30ml milk of choice
▪️1 tsp baking powder
▪️1 tsp baking soda
▪️1 tsp granulated sweetener of choice

Method:
1.	Preheat oven to 180°C
2.	To a large mixing bowl, add pea protein, oats, baking soda and baking powder, and stir to combine.
3.	Pour in the yoghurt, milk and nut butter until thoroughly combined into a dough.
4.	Fold through the white chocolate chips and strawberries
5.	Using your hands, mould the dough into 5 even-sized cookies.
6.	Place on a lined oven tray, and bake for 15-20 minutes, or until golden brown.
7.	Enjoy while fresh out of the oven, or allow to cool completely before storing. Or sandwich between your favourite ice cream!

sweet corn chimichurri butter shrimp with polenta.
INGREDIENTS
1 cup fresh cilantro, chopped
1/4 cup fresh parsley, chopped
1 jalapeño, seeded and chopped
1 clove garlic, minced or grated
2 tablespoons red wine vinegar
1/4 cup extra virgin olive oil
juice of 1/2 lime
juice of 1/2 lemon
kosher salt and pepper
1 ear yellow corn, kernels removed from the cob
4 tablespoons salted butter
1 pound shrimp, peeled and deveined
POLENTA
2 cups whole milk
1 cup instant polenta
2 tablespoons butter
kosher salt and pepper
INSTRUCTIONS
1. To make the chimichurri. In a medium bowl, combine the cilantro, parsley, jalapeño, garlic, red wine vinegar, olive oil, lime juice, lemon juice, and a pinch of salt. Stir in the corn.
2. Melt the butter in a large skillet over medium high heat. Add the shrimp and season lightly with salt and pepper. Cook until pink, about 2-3 minutes per side and cooked through. Add a few spoonfuls of the chimichurri and cook another minute or two. Remove from the heat.
3. To serve, divide the polenta between bowls and top with shrimp. Spoon over the remaining chimichurri. Enjoy!

Decided to go to a new park for a picnic lunch today on ourway to Costco. It was so beautiful, and the park even had an outdoor gym for adults. Such a cool idea! My favourite snack right now is yogurt with berries and honey 😍 bloody amazing if you ask me.
I try to avoid the added sugar varieties of yogurt and choose an option that has a really simple ingredients list. But I really don’t enjoy how they taste on their own, so if I were to eat it by itself I would much prefer to choose the swirly-wirly-fake-fruity-ultra-sweet variety. So instead I go with no added sugars and up my fruit and veggie intake for the week by adding them in. It makes it a lot easier to eat than plain yogurt, that’s for sure 😅 in terms of honey, I measure it out each time to make sure I don’t go overboard on it, because I likely will 😬

honey mustard pretzel crusted chicken salad with spicy honey mustard dressing
INGREDIENTS
PRETZEL CRUSTED CHICKEN
1 pound boneless skinless chicken tenders (or 2 large breast cut into tenders)
1 1/4 cups crushed thin pretzel twists
2 egg whites
1/4 cup dijon mustard
1 tablespoon honey
1 teaspoon seasoned salt
HONEY MUSTARD DRESSING
1/4 cup dijon mustard
1/4 cup honey
1/4 cup olive oil
1/2 lime juiced
1/2 teaspoon smoked paprika
1 teaspoon pepper
FOR THE SALAD
2 cups tiny twist pretzels for the honey mustard roasted pretzel-croutons
4-6 cup bib lettuce or a mix of lettuce and spinach
2 cups sliced strawberries
1 large avocado diced
2 ounces feta cheese crumbled
INSTRUCTIONS
Preheat the oven to 350 degrees F.
In a large bowl, combine the honey, mustard, egg white and whisk well. Toss the chicken in the honey mustard and set aside. Place the pretzels in a sealable plastic bag, seal, and finely crush through the bag with a meat mallet or other heavy utensil (or just carefully step on the bag). Spread the mixture out on a large plate or in a large dish. Spray a baking sheet with nonstick spray. Remove one piece of chicken at a time from the mustard. Place in the pretzels crumb bag and use your fist to pound the pretzels onto the chicken. Place on the prepared baking sheet and repeat with remaining chicken. Mist the tops of the pretzel crusted chicken with nonstick spray. Bake in the oven for about 20-25 minutes, flipping chicken halfway through baking, until the chicken is cooked through. Remove from the oven and serve with the salad.
While the chicken cooks combine all the ingredients for the dressing in a small bowl. Whisk well and adjust seasoning to taste.
Remove a few tablespoons (I think I used around three) of the dressing and place in a medium size mixing bowl. Toss the whole pretzels with the dressing an place on a parchment or silpat lined baking sheet. Place in the oven with chicken for 10-15 minutes or until the pretzels have turned golden brown, flipping halfway through (don't forget about them, they can burn quickly). Mist the tops of the pretzel crusted chicken with nonstick spray. Bake in the oven for about 20-25 minutes, flipping chicken halfway through baking, until the chicken is cooked through. Remove from the oven and serve with the salad. While the chicken cooks combine all the ingredients for the dressing in a small bowl. Whisk well and adjust seasoning to taste. Remove a few tablespoons (I think I used around three) of the dressing and place in a medium size mixing bowl. Toss the whole pretzels with the dressing an place on a parchment or silpat lined baking sheet. Place in the oven with chicken for 10-15 minutes or until the pretzels have turned golden brown, flipping halfway through (don't forget about them, they can burn quickly). italian spinach and crepe manicotti
INGREDIENTS
Crepes : or 8 store-bought crepes
2 large eggs
3/4 cup milk
1/2 cup water
1 cup flour
3 tablespoons melted butter
1/4 teaspoon salt
Butter for coating the pan
Filling:
1 pound spicy italian chicken sausage removed from casings
1 pinch red pepper flakes
1 tablespoon extra-virgin olive oil
8 oz baby bella mushrooms finely chopped
3 cloves garlic minced
5 oz baby spinach
3/4 cup provolone cheese shredded (you can also use ricotta cheese)
1/2 cup mozzarella cheese shredded
2 tablespoons fresh parsley plus more for garnish
2 oz cans tomatoes 14.5, I used san marzano
1/4 cup oil packed sun dried tomatoes packed
1/3 cup heavy cream
coarse salt and freshly ground pepper
INSTRUCTIONS
To make the crepes in a blender, combine all of the ingredients and pulse for 10 seconds. Place the crepe batter in the refrigerator for about 30 minutes. This allows the bubbles to subside so the crepes will be less likely to tear during cooking. The batter will keep for up to 48 hours.
Heat a small non-stick pan. Add butter to coat. Pour 1 ounce of batter into the center of the pan and swirl to spread evenly. Cook for 30 seconds and flip. Cook for another 10 seconds and remove to the cutting board. Lay them out flat so they can cool. Continue until all batter is gone. After they have cooled you can stack them and store in sealable plastic bags in the refrigerator for several days. Makes about 20 crepes
While the crepe batter rests make the filling. Preheat the oven to 400 degrees.
Grease a 9x13 inch pryex dish, set aside
Bring a large skillet to a medium-high heat. Add the ground chicken sausage to the pan and season with a good pinch of salt, pepper and crushed red pepper. Brown all over, about 7 minutes. Remove from the skillet and set aside.
Back in the skillet, add a tablespoon of oil. Add the mushrooms and sauté for 3 minutes, or until they start to soften. Add the garlic and a pinch of salt. Sauté 30 more seconds. Add the spinach and toss to wilt, maybe 2 minutes.
In a large bowl, combine the chicken suasage, spinach and mushroom mixture with the provolone, mozzarella and parsley.

Been gone a few days again. So here's the update 🤪 While I was away, I was hitting quite close to my steps or just under. I had one really good day of eating, then I had @shyannmw wedding events to attend. We had a nice day out at the mall on Thursday and I ate good calories then, and I actually did a YouTube Vlog on my day of eating and our day of events. I had to set up the church that night and I got a great amount of steps in. I finished that night out with a salad and hit just a few calories over. Friday was a little crazy because it was the day before the wedding. I had to wake up very early. I picked up my boyfriend, set up the wedding venue, have wedding rehearsal and a wedding rehearsal dinner. We had take out and I honestly wasn't about to decline because I hadn't eaten much else. I had sonic and McDonalds that day for drinks and snacks to keep me going. I didnt have my phone around me much at all that night but it was around 7-8,000 steps by the end of setting it up, so add whatever amount I didnt have my phone. And then yesterday was the actual wedding. I ate sonic before because I was running late. Later that night was the after party with food. But I was active so I hope even though there isn't going to be a loss (most likley) I might maintain still? We'll have to see in a couple of days when I weigh in. I've been a mess today and I slept a lot, did a lot of driving to get home, get my boyfriend sent back to work, etc. So I'm very much so lacking today as well!
When my YouTube Vlog gets uploaded I'll make an update on that. That day made me really happy. I did super good. I might do more because it's super fun and it makes it a little easier to stay accurate.

Post meet summary ...I got 1st place...Wasn’t a big meet and definitely not my best performance but ill take it. Squat Hit 550 on 2nd attempt (10lbs meet PR) but tweaked my back. Missed 556 on 3rd because back was hurting and only went 556 because we had more in the tank but conservative because of the back hurting. Had potentially 565+
Bench..407 1st Attempt butt came off bench a hair and they called no lift, came back 2nd attempt and smoked it. 430 went for 3rd and they made me hold it 3secs because they said it didn’t hit my chest which was a BS call.So missed it because they made me hold it so long. Had a potential 445 bench
Deadlifts ended with 545 (20lbs meet PR)but went conservative because of back of course . That actually moved fast . I went 6 for 9 but because of technical calls, Not because of strength and because my back. Last meet was 1450 this meet was 1497 (47lbs PR on total) but had a potential 1575 total. It is what it is though time to get back to the drawing board, And redeem myself with close to a 1600 total guaranteed. Thank you to EVERYONE who came and made sure everything went great. My queen @nikkiz_dc , Thank you for everything including attending to me after back was hurt. My boy Nune for helping me back stage with loading weight, handoffs, and just being there for some slaps on the back.
