Seafood Sunday JALAPEÑO CHIPOTLE CUMIN SHRIMP FAJITA STYLE! heard it was #nationalfajitaday and just so happens I made these babies Friday night. They are so easy and the best part is you only need one pan! Happy Sunday loves! How was your weekend? I literally have relaxed more than I have in months in the past two days. Got a date night in with my man last night and ate lots of tacos and guacamole and dessert. Ran some errands today and now relaxing and trying to decide what to make for dinner...these might have to happen again...

Deets: 1 pound @marinadelreyfoods wild shrimp seasoned with 2 teaspoons chipotle chili powder, 2 teaspoons cumin, 1/2 teaspoon salt, 1/2 teaspoon garlic powder, 1/2 teaspoon onion powder, 1/2 teaspoon oregano. Sauté some red onions, red pepper and sliced jalapeños in coconut oil, after a minute add about 2 teaspoons coconut aminos. Sauté for another 3 mins or so until soft, then add shrimp and sauté for about 3-4 minutes more until cooked through. Layer some tortillas with @lef_farms, the peppers and onions, shrimp, avocado and cilantro. Squeeze some lime over the top. Add extra onion if you’d like. •

One of my favourite go to snacks: greek yoghurt, cinnamon and blueberries. Quick, easy, healthy, yummy and satisfying for the sweet tooth :) it is also very refreshing for night shift. .
(I bought 3 punters of blueberries for $10 but you can always go frozen berries for cheaper)

This is the perfect meal for weekly prepping, as a small quantity will cover several meals. It's the perfect meal solution for the busy health conscious individual looking for a healthy filling meal with a south of the border twist. Try this great recipe prepared by yours truly in this week's prep and let us know what you think!

Ingredients:
•1 - 3 lbs of ground turkey
• 2 medium sized red onions chopped separately • 2-5 small/medium vine tomatoes
• Cilantro
• Lemon Juice
• Ole Mexican Ole Xtreme Wellness! Tortilla Wraps
​• McCormick’s Garlic and Onion Plus Black Pepper, Sea Salt Seasoning
• Cayenne (optional)
Fresh avocado (of choice)
Preparation:
• Brown ground turkey
• While browning add one chopped red onion
• Add McCormick’s Garlic and Onion Plus Black Pepper, Sea Salt Seasoning (approx 2 tbs/lb or to desired taste)
• Add Cayenne to desired taste (optional)
Fresh Pico Salsa
•Dice vine tomato and place in medium sized mixing bowl
•Add the second chopped/diced onion (1/2 onion for 2-3 tomatoes)
• Chop and add one bunch of fresh cilantro
•.Add lemon juice to taste
•.Add a dash of salt
• Mix and serve
Final Prep
• Add 1/2 of ground turkey mix to wrap
• Top with 1 to 2 heaping tablespoons of fresh pico sauce
• Add half of a diced avocado
• Wrap and enjoy!!

I know what I'm making tomorrow!😍 Shrimp Cucumber Bites
Ingredients:
21 oz cooked shrimp
2 c cucumber
2 tsp olive oil
Sauce:
1 Tbsp creole seasoning
6 oz avocado
½ c green onions
2 Tbsp fresh cilantro
2 tsp lemon juice
¼ tsp salt
½ tsp cayenne
Directions:
Toss the shrimp in the oil and the seasoning and cook in a preheated (medium-high heat) heavy bottomed pan/skillet until slightly blackened, about 2-3 minutes per side. Assemble the bites, topping the cucumber slices with avocado sauce, shrimp and remoulade sauce. For the sauce: mix everything and enjoy!

• Mr Khan is the type of male that will eat anything I put in front of him. Prior to meal prepping, I use to cook on the basis of what we felt like that day. I’d ask Mr Khan what he wanted to eat... he kept replying with “anything” frustrated I ended up googling ‘anything recipe’ given that ‘Grandma’s anything pie’ wasn’t really suitable for dinner I decided to start meal prepping to keep my sanity, and also reduce the amount of food waste, and our weekly shopping bill!
Mr ‘anything’ Khan has a weekly request that I make green curry for him. Every single time he’ll comment on how delicious it is. I think he thinks I make the curry paste myself - we can keep that secret between us 🤫. I always load my green curry with loads of vegetables as I am pretty hopeless during the day at consuming them (if I have lunch I’m lucky if it’s anything other than a museli bar) •

This week was filled with long hours, and next week will be even longer hours, so I made myself some fresh comfort food:
Spinach and cheese tortellini mixed with mushroom 🍄 agnolotti and garden fresh #bruschetta!! .

I have to keep it a whole brick with yall, if I ate one more damn zoodle, I was gonna have a breakdown. I ate zoodles n squoodles for lunch or dinner for part of June, the entire month of July, and the first couple weeks of August, and BITCH! I was TIII- YERRRD. 😫
Soooooo, in order to still utilize veggies from the garden, AND keep my sanity, I decided to make bruschetta instead. I used this recipe ( https://www.simplyrecipes.com/recipes/bruschetta_with_tomato_and_basil/ ) but — of course — was on my usual bullshit: I added extra spices and didn’t measure a damn thing 😂. Because the 🍅s would have to last all week, I went with the blanching method, instead of the more “pico de gallo” method where you just chop it all fresh and throw it in the bowl. It was my first time ever blanching, so I decided it’d be interesting to use some leftover dry red wine to add flavor. I think I blanched too long, but all in all, it wasn’t too shabby of a process! I actually saved the wine/water combo and set it aside to boil the noodles in as well! 10/10, would recommend 👌🏾. If you’re afraid of the 🍅s holding too much water, I suggest salting them in a strainer after they’ve been blanched and chopped, and letting the water leech out while you cook the noodles, THEN combining them with the 🌿, garlic, EVOO mixture. It worked beautifully for me ^_^. .
I plan on drinking caffeinated water during lunch to hopefully stave off the potential carb coma, but we gon see 😬😅.

Eigentlich wollte ich euch heute nochmal erzählen, wie man Hafermilch selbst machen kann... ich dachte ich versuche es noch einmal...aber...ja...lassen wir das. 😉
Stattdessen bekommt ihr ein Bild von unserem Mittagessen von letzter Woche. 😋 Linguine mit Artischocken-Tofu-Tomatensoße und Salat. 🍝🥗
Die Artischockenherzen kommen hier übrigens aus dem Glas 👉 #recycling
Unverpackten Tofu habe ich in #stuttgart leider noch nicht entdeckt 😞
Das Essen selbst ist ziemlich simpel ☝🏻Ich habe einfach eine Zwiebel, etwas Knoblauch, 400 g Tofu und zwei Gläser Artischockenherzen angebraten, mit passierten Tomaten abgelöscht und mit Salz, Pfeffer, Paprika und Kräutern gewürzt. Anschließend habe ich 1 kg (!! 😱) Linguine untergemischt. Das hat bei uns dann für einmal Abendessen und zwei Mal (bzw. für den Mann sogar ein drittes Mal) für das Mittagessen gereicht. #mealprep 🙌😎
#tipp wenn ihr Salat nach dem Waschen (noch nass!) in einer Plastiktüte im Kühlschrank aufbewahrt, hält er sich deutlich länger 🤓 #nofoodwaste #plastiktütewiederverwenden 😉 im Salat war außerdem noch Rotkohl und eine Gurke 🥒😋
